Peach Crostinis
These peach crostini are a great summer appetizer that are easy to make and a real crowd pleaser.
They are perfect for entertaining and best served with a glass of chilled prosecco in the garden!

Ingredients
For the crostini
1
baguette
2
tablespoon
olive oil
2
teaspoon
sea salt
Toppings
cheese
(goat cheese, ricotta or burrata)
fresh peaches
honey
fresh thyme leaves
Instructions
To make the crostini
Slice a baguette into thin slices at an angle.
Line crostini on a baking sheet.
Using a pastry brush, coat with olive oil and sprinkle a little salt over them
Broil 1 - 1 1/2 minutes until just toasted and crunchy.
Toppings
Place a little cheese on top of each crostini, top with some sliced peach, a drizzle of honey and the fresh thyme leaves.

Substitutions
French Baguette -
Dinner rolls or stale bread sliced thin.
Olive Oil -
Melted butter or canola oil.
Cheese -
Goats cheese, ricotta or burrata. Anything creamy.
Honey -
Agave also works well.
Thyme -
Mint, basil, terragon, rosemary and lemongrass also work well.
How To Store
Room Temperature
- Make crostini ahead of time and store them in an airtight container at room temperature for up to a week. Top when ready to serve.
Refrigerate
- These peach crostini appetizers are best served within an hour or two of making them. Before serving, keep them covered in the fridge.
