Piccata Milanese (Piccata Sauce)

Piccata Milanese is such a simple, flavorful chicken dish. The easy and amazing Piccata Sauce is made with olive oil, butter, lemon juice, wine and capers.

  • 3 boneless skinless chicken breasts
  • 1/2 c flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 egg
  • 1 Tbsp water
  • 3/4 c Italian bread crumbs
  • 1 Tbsp olive oil
  • 3 Tbsp butter
  • 1/3 c lemon juice
  • 1/2 c dry white wine see suggestions below
  • 1 Tbsp capers


  1. Preheat oven to 400 degrees.

  2. Place chicken breasts between 2 sheets of parchment paper. Pound to 1/4" thick. Sprinkle with salt and pepper.

  3. Combine flour, salt and pepper in a shallow plate. 

  4. Beat egg and water and pour onto a plate.

  5. Place breadcrumbs on a third plate. Dip chicken breasts into the flour mixture, remove excess, dip into egg mixture, followed by breadcrumbs.

  6. In a sauté pan over medium heat warm olive oil. Brown chicken breasts 2 minutes on each side and place into a baking dish.

  7. Bake chicken 8 minutes. 

  8. Meanwhile, wipe sauté pan clean and melt butter over medium heat. Increase heat to high and add lemon juice, wine, and capers. Boil about 2 minutes or reduced by half.

  9. Pour piccata sauce over chicken and serve.
