Ingredients

  • 1 lb pasta
  • 1 pkg pancetta chopped
  • 1 tsp minced garlic
  • 4 eggs
  • 1/4 c heavy cream
  • 1/4 c butter
  • 1/3 lb pecorino romano
  • pepper to taste

Instructions

  1. Bring a large pot of water to boil. Preheat oven to 200 degrees (or lowest setting) and place a large empty bowl in it for future tossing.

  2. Meanwhile in a saucepan on medium heat, cook the pancetta and garlic. Set aside.

  3. In a small bowl, whisk eggs and cream. Set aside.

  4. Cook pasta according to package directions. Drain and add to the warm bowl with butter. Toss well.

  5. GRADUALLY stir in egg and cream mixture. Toss in pancetta and pecorino, reserving a little to garnish. Pepper to taste.

Recipe Notes

Use 1 lb thick-cut bacon, chopped, if you are unable to find pancetta.
