No Bake Trail Mix Cookies

These easy no bake cookies are perfect for when you want a sweet treat in a hurry! These sweet and salty snacks are made with a homemade trail mix and chocolate, and you can make a batch in just 5 minutes!

Ingredients

  • 1 ¾ cups butterscotch chips {package}
  • ¾ cup peanut butter
  • 1 cup peanuts
  • 1 cup pretzel sticks
  • 1 cup chex
  • 1 cup marshmallows
  • 1 cup peanut butter m&m’s
  • 1 cup chocolate chips {optional}

Instructions

  • Line cookie sheets/platters with parchment paper {must fit in your refrigerator}
  • In the microwave, combine butterscotch chips & peanut butter 30 seconds at a time until smooth, stirring intermittently.
  • In a separate bowl, combine remaining ingredients. Stir in peanut butter mixture until well combined.
  • Drop mixture by the spoonful onto cookie sheets & refrigerate until solid - about an hour or let set at room temperature.
  • Optional - melt 1 c chocolate chips until smooth and drizzle on top.

Notes

  • Be sure to line your cookie sheets with parchment to ensure easy removal.
  • If you don't have a microwave, you ca also melt the butterscotch on the stovetop.
  • Let the cookies fully set before serving.
  • Store in an airtight container in the fridge.
