Green Beans in Shallot Butter

  • 1 lb green beans
  • 3 Tbsp butter
  • 1 shallot finely chopped
  • fresh cracked pepper


  1. Place clean, trimmed green beans in a saucepan and cover with 1 c water.
  2. Bring to a boil over medium heat {about 5 minutes}.
  3. Pour green beans over a strainer filled with ice.
  4. Meanwhile, melt butter and sauté shallot for 3 minutes. Return green beans to the pan, toss and serve.
