Bacon and Cheese Soup

This bacon, cheese and beer soup will be sure to warm you up!

  • 4 slices bacon
  • 4 Tbsp butter
  • 1 Tbsp onion flakes
  • 1/4 c flour
  • 1 c cream or half and half
  • 8 oz white cheddar
  • 8 oz gloucester cheese {I use one with chives in it}
  • 8 oz fontina
  • 12 oz beer
  • 1/2 c vegetable stock
  • pepper


  1. Slice bacon thin and fry on medium. Remove bacon and set aside. Melt butter and allow it to brown {smells nutty}. Reduce heat to medium low. Add onion flakes, stir well. Stir in flour. Add cream, stir, then shred cheeses into pan, stirring continuously. Add beer {I used a wheat beer}, vegetable stock and allow to simmer until smooth and incorporated. Stir in bacon, leaving a little aside to garnish, and pepper to taste.
