  • 1/2 c butter softened
  • 1/2 c sugar
  • 1/2 c brown sugar packed
  • 1/2 c peanut butter
  • 1 egg
  • 1/2 tsp vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 c flour
  • 1/2 c brown sugar for rolling
  • 8 cracks of salt for rolling
  • Baker's dipping chocolate

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine butter, sugars, peanut butter and vanilla until smooth.
  3. Add egg until incorporated.
  4. In a separate bowl, combine baking soda, baking powder, salt and flour. Incorporate dry ingredients into wet mixture until combined.
  5. In a small bowl, combine brown sugar and salt. Roll a large dough ball {I use a medium cookie scoop}, break in half to add a melting wafer and then roll into a ball.
  6. Roll dough ball in brown sugar and salt mixture and place on a parchment lined cookie sheet. Bake 8 minutes and serve warm.

Recipe Notes

These chocolate peanut butter cookies are best served out of the oven, but if you’re saving them for later, warm them in the microwave for 20 seconds for blissful bites.
