Watermelon Mojito

Refreshing Watermelon Mojito recipe with fresh watermelon juice and simple syrup muddled with mint for an incredible easy summer cocktail.

Ingredients

  • 2 square chunks of seedless watermelon
  • mint sprig
  • ice crushed or cubed
  • 1 oz simple syrup
  • 1 1/2 oz white rum
  • 1/2 c club soda

Instructions

  1. In a food processor, puree watermelon. Remove any seeds with fine mesh sieve. Set aside.

  2. Muddle watermelon and lower leaves from sprig of mint {reserving others to garnish}.
  3. Add crushed ice. 
  4. Add 1 oz simple syrup or 2 tablespoons sugar, rum and club soda.
