Watermelon Mojito
Refreshing Watermelon Mojito recipe with fresh watermelon juice and simple syrup muddled with mint for an incredible easy summer cocktail.

Ingredients

square chunks
seedless watermelon
(enough for ½ cup of puree)
mint sprig
ice
crushed or cubed
1
ounce
simple syrup
1½
ounces
white rum
½
cup
club soda
or sparkling water
Instructions
In a food processor, puree watermelon. Remove any seeds with fine mesh sieve. Set aside.
Muddle watermelon and lower leaves from sprig of mint {reserving others to garnish}.
Add crushed ice.
Add 1 oz simple syrup or 2 tablespoons sugar, rum and club soda.
Notes
Mojito Substitutions
Substitute sugar for simple syrup.
Substitute sparkling water for club soda
For a virgin watermelon mojito, substitute rum with white grape juice, pineapple juice, apple juice or apple cider.
