Watermelon Mojito

Refreshing Watermelon Mojito recipe with fresh watermelon juice and simple syrup muddled with mint for an incredible easy summer cocktail.

  • 2 square chunks of seedless watermelon
  • mint sprig
  • ice crushed or cubed
  • 1 oz simple syrup
  • 1 1/2 oz white rum
  • 1/2 c club soda


  • In a food processor, puree watermelon. Remove any seeds with fine mesh sieve. Set aside.
  • Muddle watermelon and lower leaves from sprig of mint {reserving others to garnish}.
  • Add crushed ice. 
  • Add 1 oz simple syrup or 2 tablespoons sugar, rum and club soda.


Mojito Substitutions

  • Substitute sugar for simple syrup.
  • Substitute sparkling water for club soda
  • For a virgin watermelon mojito, substitute rum with white grape juice, pineapple juice, apple juice or apple cider.

  • 4 c club soda or sparkling water
