Piccata Milanese with Piccata Sauce

Ingredients

chicken flour salt and pepper egg water bread crumbs olive oil butter lemon juice white wine capers

Preheat oven to 400 degrees.

Step 1

 Place chicken breasts between 2 sheets of parchment paper. Pound to 1/4″ thick. Sprinkle with salt and pepper.

Step 2

Combine flour, salt and pepper in a shallow plate.

Step 3

Beat egg and water and pour onto a plate.

Place breadcrumbs on a third plate. Dip chicken breasts into the flour mixture then dip into egg mixture, followed by breadcrumbs.

Step 4

In a sauté pan over medium heat warm olive oil. Brown chicken breasts 2 min on each side and place into a baking dish. Bake for 8 min.

Step 5

Wipe sauté pan clean and melt butter over medium heat. Add lemon juice, wine, and capers. Boil about 2 minutes.

Step 8

Pour piccata sauce over chicken and serve.
