Ingredients

shortbread cookies butter brown sugar sugar heavy cream mascarpone cheese powdered sugar lemon juice strawberries blueberries raspberries

Filling Ingredients

Step 1

Crush shortbread cookies until smooth. Add butter and sugars and combine.

Step 2

Press into a greased pie dish. Refrigerate 10+ minutes.

Step 3

Whip heavy cream, gradually increasing speed until a peak forms. Beat in powdered sugar one tablespoon at a time.

Step 4

Gently beat in lemon juice and mascarpone until well combined. Add mixture to crust and top with fruit.  Refrigerate until serving.
