Cookie Ingredients
butter sugar brown sugar eggs vanilla flour baking soda cinnamon salt carrots
Frosting Ingredients
butter cream cheese vanilla powdered sugar
Step 1
Combine butter and sugars in a medium mixing bowl. Scrape sides and combine until creamy.
Step 2
Add eggs and vanilla until just combined. Then, add flour, baking soda, cinnamon and salt.
Step 3
Add carrots.
Step 4
Drop onto cookie sheet using a cookie scoop or tablespoon. Bake 19-20 minutes. Allow to cool.
Step 5
In a mixer or large mixing bowl, beat butter and cream cheese on high until light in color.
Step 6
Beat in vanilla. Gradually beat in powdered sugar on low.
Step 7
Beat mixture on high until light and fluffy in texture (about 3 minutes).
