HOW TO MAKE

Ingredients

corn tortillas Chihuahua cheese arugula flank steak tomatillos  serrano chiles avocado cilantro lime

Serrano Avocado Salsa

Marinade Ingredients

olive oil tequila lemon or lime juice worcestershire sauce dijon mustard chipotle peppers in adobo paprika salt pepper flakes

Step 1

Combine the marinade ingredients in the food processor or mixing bowl.

Step 2

Place steaks in baking dish. Make  cuts to allow marinade to soak into meat. Combine ingredients and pour over steak. 

Step 3

Heat grill or stovetop to medium high. Add steak and cook 4 minutes. Flip and cook 4 minutes or until it reaches the desired temperature.

Step 4

Remove from heat, cover and allow to rest at room temperature 10 minutes. Slice thin across the grain.

Step 5

In a food processor, combine tomatillos, serranos, avocado, cilantro and lime juice. Pulse until smooth.

Step 6

Assemble tacos adding steak, chihuahua cheese and serrano sauce and an optional squeeze of fresh lime.
