    I’ve been looking for ways to sneak veggies into our dinners without receiving too much resistance from Adalyn. She and I share a love for pasta, but lately, she has been struggling eating vegetables. I turned to an old favorite last week, and it was a huge success! Long before I took interest in vegetables myself, I would eat spinach noodles without realizing what they were. They add a lot of flavor to this simple sauce. Straw and hay is an easy recipe that your family is sure to enjoy as well.

    Stray and Hay Recipe

    Cook Time 10 minutes
    Total Time 20 minutes
    Servings 4 -6

    Ingredients

    • 8 oz spinach pasta
    • 8 oz egg pasta
    • 1 pkg prosciutto
    • 1 shallot chopped
    • 2 Tbsp butter
    • 1 can peas
    • 1 1/2 c freshly shredded parmesan
    • 1/2 c heavy cream

    Instructions

    1. Prepare noodles, meanwhile in a large skillet on medium, melt butter and add prosciutto and shallot. Allow to sauté for 3-4 minutes. Add peas until thoroughly warm. Drain pasta and pour sauce over noodles. Add parmesan and cream and toss until smooth.
