  • With 4 holiday parties to attend this weekend and 3 dishes to make, time is limited, so I created easy treats and added to the presentation.  I used to work for a caterer whose philosophy was to create food that looks as good as it tastes – I love the concept and think it is often thought of as being too time consuming.

    I gave these petite cupcakes the height they deserve by placing them on a pedestal.  Miniature red velvet cupcakes are not only easy to make, but color appropriate!  I make mine from a mix, using 1 less egg than recommended and bake them for 15 minutes for a lighter texture.  Guests tend to prefer these petite size bites rather than their full size counterpart for ease of consuming and having a taste of everything offered at the party.
