  1. Preheat oven as directed. Grease a baking dish with cooking spray.
  2. In a large bowl or mixer, combine dough ingredients until just combined. Press into dish.

Valentine’s Day – Use an array of red fruits including strawberries, raspberries, and grapes and a heart shaped dish.

Easter – Roll your dough in a sheet pan and trim with a pizza cutter to create an egg shape. Decorate in lines.

Mother’s Day – Add edible flowers and load it with fruit for a one-of-a-kind memorable Mother’s Day dessert.

Use parchment paper to press down and smooth the cookie dough base into the pan, if necessary.

Refrigerated sugar cookie dough is less sticky to work with, but who has the time for that?

I like to use a tart pan for beautiful fluted edges, but you can use a pizza pan, 1/4 cookie sheet / sheet pan, 2 pie dishes – whatever you have on hand.

No need to allow the fruit pizza base to cool completely before frosting! Spread onto the warm fruit pizza crust for a smooth, even finish without the fuss.

How to Store

  • Room Temperature – This dessert can sit out for up to two hours while serving. Because of the cream cheese icing and fresh fruit, it should be refrigerated after that.
  • Refrigerator – Fruit Pizza is best served fresh, but can be stored refrigerated up to three days covered. This crust keeps better than most fruit pizza crusts.
  • Freezer – While you can safely serve this fruit pizza, I don’t recommend it. The moisture content will change the outcome of this dessert after freezing!

Ingredients  

Sugar Cookie Base

Fruit Pizza Icing

  • 8 ounces cream cheese softened
  • cup powdered sugar
  • 1 teaspoon vanilla extract sub with lemon or almond extract if you prefer
  • 1 cup fruit sliced, for decorating

Instructions 

  • Preheat oven to 400℉.
  • In a large mixing bowl cream butter and sugar. Add eggs and vanilla.
    ¾ cup butter, 1 cup white granulated sugar, 2 large eggs, 1 teaspoon vanilla extract
  • Gradually add flour, baking powder and salt.
    2½ cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon salt
  • Press into greased tart dish or pizza pan and bake 10-12 minutes (could be longer depending on size and depth of your pan – use toothpick test to ensure doneness). 
  • Combine icing ingredients of cream cheese, sugar and vanilla. Gently smooth onto warm crust.
    8 ounces cream cheese, ⅓ cup powdered sugar, 1 teaspoon vanilla extract
  • Top with fruit. Serve and enjoy.
