I love to cook anything that’s quick, delicious and memorable. Have you ever tried brie in quesadillas? It’s so creamy, that you won’t be able to resist! I like to make these apple and brie quesadillas as appetizers. They only take a couple minutes and my guests think I’m a gourmet chef.
1 onion, sliced and quartered
2 Tbsp balsamic vinegar
pinch of sugar
pinch of thyme
1/2 sprig rosemary or 1 tsp dried
1 tbsp olive oil
1 granny smith apple, sliced thin
brie, rind removed and sliced thin
In a large saucepan, add onion, balsamic, sugar, thyme, rosemary and oil on medium low heat. Allow onions to caramelize-about 15 minutes. In another sauce pan on medium, add tortilla, filling half with brie, apple and caramelized onions. Fold tortilla over. Cut each into 4 triangles and serve.
