Chocolate Lovers Cookies

  • I know a lot of people are intimidated by double broilers, but don’t let that stop you from trying a recipe. I don’t even have to own one – I like to keep it simple in the kitchen.  Just boil a large pot of water and add pot that fits into the top.  It’s that easy!
    6 Tbsp butter
    2 bags semi-sweet chocolate chips
    6 eggs
    1 c brown sugar, packed
    1 c sugar 
    1 tsp vanilla
    3/4 c flour
    3/4 tsp baking powder
    1/2 tsp salt
    {nuts or peanut butter chips optional}
    Preheat the oven to 350 degrees.
    In a double broiler, or sauce pan on top of a large pot of boiling water, add chocolate chips and butter. Stir frequently until melted on medium high.  While doing this, mix eggs, brown sugar, sugar and vanilla in a large mixing bowl.  Add melted chocolate to the mixture, mixing thoroughly.  In a separate bowl, mix flour, salt and baking powder.  Gradually add mixture to chocolate batter.  Drop by the tablespoon onto parchment lined cookie sheets.  Bake 10 minutes for chewy cookies and 12 for crispier cookies.  
    These cookies have the best texture.  Enjoy!
