Chocolate Lemon Cake

  • I enjoy somewhat unexpected combinations that leave you craving more.  To lighten it up for Spring and Summer, I made a chocolate lemon cake.  This works well with both dark or milk chocolate cake {I use a mix}.
    Lemon Icing:
    1 stick of butter, softened
    1 tsp vanilla
    1/8 c milk
    3.5 c powdered sugar
    2 Tbsp lemon juice
    pinch of salt
    Mix butter and vanilla.  Cream milk into the butter mixture.  Gradually mix in powdered sugar.  Cream on high for 2 minutes.  Add lemon juice and a pinch of salt.
    You don’t have to be an expert cake decorator to create something beautiful.  Using even just a spreader, you can coat the top of the cake and garnish with lemon zest or chocolate shavings.  I lieu of a zester, I just used a potato peeler!  To reduce the chance of crumbs, freeze your cake for a few minutes before icing it.
