    A few weeks ago my lifelong friend Tori and I set out on a Saturday morning to some tag and estate sales. We didn’t score any great finds, but we did score a great time followed by a must-have sandwich. The BrieLT. Tori reminded me that there is so much more to discover in St. Louis. We went to Cafe Osage, inside a greenhouse in the city. I knew from the moment I saw the doors and windows that I was in for a treat! After a lot of debating, I finally selected a salad. Thankfully, Tori was a cognizant and true friend because she realized I was drooling over her Brie L T and offered me some. It was like no other sandwich I have ever had and I knew I had to have it in my life – often!

    Like all good things, a Brie L T is composed of a few delicious ingredients and can be made in less than 10 minutes, much like a grilled cheese. The secret is in the sauce, or jam. Have you had tomato jam? Seriously. Amazing. When smothered on a great bread with slightly melted brie, bacon and topped with arugula, it awakens all of your happy little tastebuds. The pairing is incomparable. It’s become a weeknight favorite because it requires mostly staples {at least in our house, we can’t survive a day without brie} and it’s great for those I-don’t-wanna-cook days.

    Have I also mentioned that I love a good open faced sandwich? It just seems to make an effortless beautiful presentation.

    Course Entree
    Cook Time 10 minutes
    Total Time 10 minutes

    Ingredients

    • bacon
    • bread sliced
    • tomato jam
    • butter
    • double cream brie
    • arugula

    Instructions

    1. Cook bacon and allow to drain on a paper towel.
    2. Spread tomato jam on one side bread.
    3. Over medium heat, allow a tablespoon of butter to melt at a time and add bread.
    4. Immediately top one slice of each sandwich with brie to melt.
    5. Remove, top with bacon and arugula. Serve warm.
