  • Cream Butter and Sugars – This process aerates the butter – the sugar whips through the butter and creates pockets of air. When heated, the air expands and lifts the batter, creating rise in your bread.
  • Sift the Flour – While this step is not required, it makes the bread lighter and fluffier. Pour measured flour into a sifter or strainer. Flour will fall softly into batter as you pull the handle on the sifter or gently shake a strainer. This process will help to avoid clumps and make the batter less dense.
  • Don’t Over Mix – Mix just until the ingredients are incorporated for a soft and tender sweet bread. A lot of mixing develops the gluten in flour and produces a more dense and bready texture.

  • Vanilla Extract – Vanilla adds a hint of flavor.
  • All Purpose Flour – If possible, sift your flour for the lightest, fluffiest bread. This will prevent you from mis-measuring, making your bread dense.
  • Cinnamon – A hint of cinnamon adds quintessential warm flavor to this bread.
  • Salt – A hint of salt brings out all the other flavors in baking. Omit if you are using salted butter.

  • Preheat oven to 350°F. Grease a 1 pound loaf pan.
  • In a large mixing bowl, cream butter and sugars for 3 minutes. They'll become light in color and fluffy.
  • Add eggs, bananas and vanilla until just combined.
  • Gradually add flour, cinnamon and salt until just combined. Do not over mix. Optional: Fold in nuts or chocolate chips.
  • Pour batter into prepared pan. Bake 55 minutes or until a toothpick comes out clean.
